These Cluck & Squeal Jalapeño Cheese Bombs take just six ingredients, seasoned with Cluck & Squeal All Purpose Seasoning & BBQ Rub. These clucking awesome appetizers couldn't be easier, and everyone will be begging for more!

Cluck & Squeal Jalapeño Cheese BOMBS!

Directions

Heat the Cooker

Set your smoker, BBQ or oven to 325–350°F / 165–175°C.

Mix the Cheese & Prep the Peppers

In a bowl, mix the cream cheese, goat cheese and Cluck & Squeal All Purpose until smooth and consistent.

Halve the jalapeños lengthwise and core them well, removing all of the membrane. Otherwise they'll be too hot for everyone to enjoy.

Fill Halfway

Spoon the seasoned cheese mixture into each jalapeño half, filling it only halfway.

Add the Meat Cap

Mix the minced pulled pork or chicken into the remaining cheese mixture until smooth. Shape it into small half-egg or football shapes and press one gently onto each half-filled jalapeño.

Wrap in Bacon

Cut the bacon slices in half. Sit each jalapeño on a half slice and gently stretch the bacon over the top on a 45° angle, covering the bottom and almost the entire top.

C&S Tip! It takes a bit of practice. Regular packaged bacon has just the right stretch.

Cook & Enjoy

Cook the bombs for about 45 minutes, until the peppers are soft and the bacon is rendered and crisp. Serve and enjoy!

Pitmaster notes

Tips & variations

No crunch, then CRUNCH! Lower temperatures take longer. You're looking for the pepper to soften and the bacon to render and crisp. Then the centre explodes in your mouth: BOOM = HAPPINESS!

Use your leftovers. These are a great way to use up leftover smoked pulled pork, like our Savory Spicy Pulled Pork Chile Verde.
